I have never before made Thanksgiving dinner for just myself. Way too much trouble and dishes and lack of space for leftovers in my RV. That’s all changed this year.
I have come up with a one dish main course that combines the turkey, the stuffing, and the vegetables. Just tasted it hot from the oven. I am in Thanksgiving heaven….and now have leftovers in one easy dish for my lunches at work. This is the perfect dish for the one person family of me.
Saute in two tablespoons of butter: one cup of diced onion, one cup of diced celery, half cup of grated carrots.
Add one and a half cups of chicken broth and a box of Stove Top Stuffing. Turn off the heat.
Add two eggs and mix thoroughly. Then add three cups of cooked diced turkey or chicken. I used chicken.
Turn oven to 350, put the mixture into a buttered pie dish. Bake for 30 minutes.
I also made a 5 ingredient pumpkin pie sans crust.
One 15 oz. can of pumpkin , one 14 oz. can of sweetened condensed milk, two eggs, half teaspoon salt. Mix all together, place in a buttered pie dish, sprinkle the top with cinnamon and bake at 350 for 35 minutes.
Now tomorrow when I come home from a half day at work I’ll just have to make candied yams and open a can of cranberry sauce.
I’ll be enjoying my Thanksgiving dinner while thinking of all my wonderful family and friends. It will make me feel a little bit closer to home.
